- Bread: the kind you like (seeded or not, gluten-free, sandwich, farmhouse, rye...).
- Spinach shoots: replace with lamb's lettuce or arugula, for example.
- Four cheeses: Carrés Frais, feta, mozzarella and Gruyère. Of course, you can replace them with others you like.
- Basil Pesto: store-bought or homemade.
- Parma ham: or white ham, Prosciutto, ... indulge your taste buds!

- To make this recipe vegan, replace the four cheeses with faux-mages you like, and the Parma ham with the meat substitute of your choice.

❄️ Storage
Wrap the cold croque-monsieur (important to prevent condensation and softening) in aluminum foil and place in the fridge. Under these conditions, it will keep for a maximum of 24 hours.
To reheat, simply pop it in the oven and you're done!

Italian croque monsieur (without béchamel)
Ingredients
- 4 slices bread
- 2 small handfuls baby spinach
- ¼ cup cream cheese divided
- 1 pinch nutmeg
- 2 small tablespoons basil pesto
- 1 tablespoon feta cheese
- 4 slices Prosciutto
- ¼ cup mozzarella balls
- ¼ cup Swiss cheese
- 2 tablespoons oregano
- salt to taste
- black pepper to taste
Instructions
- Preheat your oven to 419°F/215°C in natural convection/static heat mode. Prepare the first croque-monsieur: on a slice of bread, spread half cream cheese, 1 tablespoon of Pesto, a handful of spinach shoots and crumble half the feta cheese.
- Cut the mozzarella balls in half and add half of them. Sprinkle with a pinch of nutmeg, add half the Parma ham and close the croque-monsieur with a second slice of bread, pressing lightly with your hand.
- Repeat for the 2nd croque-monsieur and place on an oven tray lined with parchment paper.
- Add the grated Swiss cheese, sprinkle with oregano, season with salt and pepper and bake for 10 minutes.
- Turn your oven to grill mode and leave to cook for no more than a minute. Enjoy piping hot, on its own or with a salad.
