    Green chicken curry with coconut milk

    Curry...like in India?

    We all think of curry as an Indian dish...but in fact, it refers to all the different kinds of sauce dishes that exist in India. It can also refer to the blend of spices used to make curry. In fact, in the land of the sacred cow, there is also a curry leaf (Kaloupilé leaf) used to spice up dishes.

    By adapting to the season's produce, the region or the cook's mood, you can discover the many and varied curry recipes. It can be made with meat, as in this recipe, but also with vegetables or fish.

    Which coconut milk to choose?

    You may not know it, but in some countries like Thailand, monkeys can be enslaved and cruelly exploited to collect coconuts.

    A PETA survey explains: "Many monkeys are said to be illegally removed from their families and their natural environment when they are just babies. They are fitted with rigid metal collars and kept chained or tethered until they are no longer useful to the coconut industry. If the monkeys try to defend themselves, their canines can be pulled out."

    If you buy coconut (milk, cream, oil, etc.) from Thailand, you may be unknowingly supporting this cruelty. Try to choose products from Brazil, Colombia or Hawaii, which do not exploit monkeys.

    Studies show that using monkeys is inefficient (from a purely cynical point of view), since they can't tell the difference between ripe and unripe coconuts...

    Leftover coconut milk?

    If you haven't finished your carton of coconut milk, don't throw it away: put it in ice cube trays and freeze it for later use. Please note that you only have one month to consume it.

    Vegan alternative

    For a vegan alternative, simply replace the chicken with the meat substitute of your choice (tofu, seitan, soy, etc.).

    Green chicken curry with coconut milk

    A simple chicken curry that doesn't take hours to prepare...and is absolutely delicious!

    Cook Time 30 minutes mins

    Ingredients

    • 1 tablespoon olive oil
    • ½ large onion
    • 3 chicken breast
    • 1 ¼ cups coconut milk
    • 1-2 tablespoons green curry paste adjust to your preferred level of spiciness
    • ½ lime
    • 3 tablespoons fresh cilantro
    • ¾ cup rice for serving

    Instructions

    • In a hot frying pan, drizzle with olive oil, then add your onion, finely sliced beforehand. Let the onion brown, stirring occasionally.
    • Meanwhile, cut your cutlets into large chunks. Once the onion is colored, add it to the pan, along with the coconut milk, curry paste, lime juice and zest, cilantro (and a little ginger, if your curry paste doesn't contain any).
    • Cover and cook over medium-low heat for around 25 minutes. Prepare your rice by cooking it in a pot of boiling water for the time indicated on the packaging.
    • Serve the chicken with the rice and enjoy!
