Soft and delicious waffles
These waffles are super easy to make, they will take you less than five minutes to prepare and the result is really great: totally airy and ultra soft. In short, it's the perfect recipe for a successful brunch, a gourmet breakfast or even an exquisite snack.
It's also a family recipe, since it was my aunt who passed this recipe on to me. She did it to my cousins and me since we were little. Another Proust madeleine for me!

- As European, I'm used to working in grams and milliliters. For savory dishes, the American measuring system can work just perfectly. But for anything sweet, I really recommend using a digital scale, which is much more precise. That way, you'll be sure to succeed with your recipes.
- In baking, it is often recommended to mix the dry ingredients first before adding the liquid ingredients. And this recipe is no exception to the rule, as you will see in the steps!
- What allows you to have airy waffles like these is the mixture and balance between sparkling water and milk.
- Lumps are the number one enemy of a successful waffle batter: if you have them, don't panic, just use a blender until you have a smooth batter.
- Do not put your dough in the fridge: let it rest at room temperature. The yeast, if it is at too low a temperature, will not activate because the cold will have killed it. Place a clean cloth or plastic wrap over your bowl and let it rest out of the fridge.
- The powerful waffle maker is really very important: the first one I bought made me very soft waffles and really not very good because it wasn't powerful enough… So, of course, it offered to make croque monsieur and puppets, but the waffles were a failure. I recommend that you have one with at least 1200 Watts!
- Your waffle iron must be hot before you pour your batter into it
- Do not stack your waffles on top of each other: with heat and humidity, they will soften.

Put your waffles in an airtight container so that air does not get to them, otherwise they will soften.
❄️ Freeze waffles
Once your waffles are cooked and cooled, place them side by side in your freezer and leave them like that for 2-3 hours. After that, you can place them in a freezer bag, marking the date and recipe on it. To eat them, pop them in the toaster until nice and hot.

Best easy French waffles
Ingredients
- 2 ⅓ cups all-purpose flour (300g)
- 2 teaspoons baking powder
- 1 pinch salt
- ⅓ cup sugar (75g)
- ½ cup unsalted butter melted (100g)
- 2 large eggs
- 1 ⅛ cups sparkling water (250g)
- 1 cup milk (250g)
- butter for cooking
Instructions
- Mix the flour and baking powder in a bowl. Then make a small well in the center and add a pinch of salt and the sugar, then mix again.
- Then add the melted butter (but cooled, very important), the egg, the milk and the sparkling water.
- Mix well (put in a blender if there are lumps), cover the bowl with a cloth or plastic wrap and let everything sit for at least 1 hour at room temperature.
- In your waffle maker, place a good knob of butter, a ladleful of the mixture and close the device to let it cook until golden. Once all the mixture is used up, add the toppings and enjoy!
