Focaccia sandwich can be stored for up to 48 hours in airtight container. I advise you to eat your sandwich after this time, otherwise it will be much less soft.
You can find them in large supermarkets, in some markets or in exotic grocery stores.
Zucchinis: May to October included.

Focaccia bread sandwich
Ingredients
- ½ focaccia
- 1 ¼ cups zucchini
- 2 cups cremini mushrooms
- 2 teaspoons basil Pesto
- 1-2 tablespoons burrata
- 1 handful spinach leaves
- ½ preserved lemon
- Salt to taste
- Black pepper to taste
- 1 tablespoon extra virgin olive oil
Instructions
- In a frying pan with a drizzle of olive oil, place your zucchini and sliced mushrooms, season with salt and pepper, and cook over high heat for around ten minutes, stirring often to prevent sticking.
- Cut your focaccia into rectangular slices, spread with Pesto and top with the spinach shoots, vegetables and burrata. Grate a little preserved lemon, season lightly with pepper and close the sandwich with a second piece of focaccia.
- Repeat for the second sandwich.
