🥬 When do you eat endives and sucrines?
The chicory season runs from January to May included, and the sucrine season from October to July included.

This burger will keep for 24 to 48 hours in your fridge, if kept in a tightly sealed tin. After that, it may lose some of its taste.

Veggie falafel burger with yoghurt-mint sauce
Ingredients
- 2 burger buns
- 10 falafels
- 1 endive
- ½ ¼ cup Greek yogurt or plain yogurt
- 8-10 fresh mint leaves
- 1 Gem lettuce or any other salad you like
- 1 small shallot
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- Salt to taste
- Black pepper to taste
Instructions
- In a hot frying pan, sauté the falafels over medium heat with a drizzle of olive oil for around 5 minutes, stirring frequently.
- Once cooked, cut them in half and make your own sauce: chop the mint and mix with the fromage blanc, salt and pepper. Set aside.
- Finely chop the shallot and mix with the olive oil, vinegar, salt and pepper. Cut off the base of the endive, remove the hard end and chop it, along with the sucrine. Reserve half of this salad for the side dish.
- Cut the burger buns in half and brown in the toaster. Slice the red onion and assemble the burgers: on the base, place a little sauce, the half-falafels, slices of red onion and the salad. Serve with the remaining salad.
