🧀 Ingredients
You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this black truffle pasta recipe.
- Truffle oil, that enhances the truffle flavor. It can be replaced with truffle butter. You can also use regular olive oil, but it's a bit of a shame.
- Parmesan cheese - I really recommend buying a block of cheese that you can grate yourself at the last minute, it's so much better than store-bought shredded Parmesan cheese.
- Pasta - this recipe calls for fresh pasta, the best type of pasta as it's so flavorful, and you can buy them in most grocery stores. Of course, homemade pasta is also an option!
- Fresh black truffles - you might be wondering what kind of truffles to choose, I get it, it's a real deal! In my opinion, you should avoid summer truffles, which are muuuuch less flavored than winter truffles, that we recommend here in France. The bests are from the Périgord region. Fresh truffles are tastier and, unsurprisingly, best during the peak season, from late November to mid-March.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Optional - if you like, you can add slices of button mushroom when you cook the shallot and garlic, it's delicious!
✨How to make these pasta with truffle cream sauce?
Recipe details and quantities are in the recipe card below.
- Heat a medium pan over medium heat. Pour the truffle oil.
- When hot, add the minced garlic and shallot. Let it cook for 4-5 minutes, stirring often so it doesn't stick, or until golden brown.
- Grate the majority of your black truffle.
- And use a truffle slicer to make some slices for the decoration of the dish.
- Deglaze with white wine and let it evaporate for 2-3 minutes. Start cooking the pasta (as this recipe calls for fresh pasta, it's super quick) in a pot of boiling water, following the instructions on the packaging for al dente cooking.
- Pour the heavy cream.
- Then the freshly grated Parmesan cheese and a pinch of salt.
- Finish with freshly grated black truffle in the pan. Mix well and let it cook for one minute, so all the flavors develop.
- Drain the pasta, added them to the pan of sauce.
- Serve in plates, add truffle slices and enjoy pipping hot!

- Use high-quality ingredients - there are very few of them, so I really recommend investing in quality ingredients, they really make a difference - you won't regret it!
- Cook the pasta al dente - the pasta will finish cooking while in the pan, so don't overcook them or you might end up with a mishmash haha.

Store - I recommend storing the sauce in an airtight container in the refrigerator for up to 3 days.
Reheat - reheat the sauce in a microwave safe bowl and add freshly cooked pasta.
