- Chicken: I recommend chicken fillets or cutlets.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Onion, white or yellow.
- Spices: I use Cajun spices and the Italian blend.
- Tagliatelle: if you can, use fresh pasta - it's so much better! You can also replace them with Fettuccine or Pappardelle.
- Creme fraiche for the sauce.
- Tomato paste to give the dish a light, sunny flavour.
- A little mustard to spice up the sauce.
- Parmesan cheese: I recommend buying it in blocks and grating it yourself, as it's much better.
- Herbs: parsley, chives and basil. Take them fresh, dried or frozen - whatever you have on hand!
✨Customize this Cajun chicken
If you want to add more vegetables, leeks, tomatoes, peppers or spinach would go perfectly with this recipe!
- For the leeks: slice into small chunks and sauté, covered, over low-medium heat with a knob of butter for around 20 minutes.
- For the peppers: cut into large chunks, remove the seeds and place on an oven tray lined with aluminum foil. Then drizzle with oil and bake for 30 to 40 minutes at 390°F/200°C.
- For the spinach: after washing, reduce it in the sauce.

Cajun chicken pasta
Ingredients
- 10.5 oz chicken fillets
- 2 garlic cloves
- ½ onion
- 3 tablespoons Cajun seasoning
- 1 tablespoon tomato basil garlic seasoning blend
- 1 teaspoon olive oil
- 3 teaspoons tomato paste
- 1 teaspoon mustard
- 1 pinch Espelette pepper
- 7 oz pasta
- 1 cup creme fraiche
- ¾ cup Parmesan cheese freshly grated
- 1 tablespoon parsley
- 1 tablespoon chives
- ¼ lemon
- salt to taste
- black pepper to taste
Instructions
- Finely chop the garlic and onion, then set aside. Place the chicken fillets in a bowl, add the Cajun seasoning, tomato basil garlic seasoning blend and Espelette pepper, and mix well to coat the meat.
- In a frying pan with the olive oil, sauté the garlic and onion over medium heat until golden.
- Then add the spicy chicken fillets, a little olive oil to prevent sticking, and brown on both sides, before setting aside. Meanwhile, cook the pasta for the time indicated on the packaging.
- Pour the tomato paste, mustard, creme fraiche and any remaining spices from your bowl into the chicken pan. Allow to melt for a minute, then add the chicken and cook for a few minutes before adding the drained pasta. Mix well.
- Serve the pasta and chicken on a plate, add the Parmesan cheese, salt and pepper and finish with fresh chives, fresh parsley and a squeeze of lemon juice. Enjoy!
