    Vietnamese shrimp spring rolls

    Spring rolls are long and complicated: the myth

    I have to be totally honest with you: I've always been convinced that spring rolls were super complicated to make, and that they took a thousand years to make… As I've always had a passion for Asian cuisine, I recently decided to give it a try. And then, revelation: if only I'd known, I'd have made it much sooner! Sometimes, we make a world of things that are actually quite simple to achieve.

    In any case, with my recipe, your rolls will be ready to eat in 15 minutes, and what's more, they're mega-easy to make. Don't make the same mistake I did, and enjoy these delicious spring rolls now, as an aperitif or as an appetizer before a nice dinner.

    Quick and easy spring rolls

    Ready in 15 minutes and super-easy to prepare, these spring rolls will transport you to Japan in one bite.
    Servings 7 spring rolls

    Ingredients

    • 1 large carrot peeled
    • ⅓ lb pork shoulder cut into thin strips
    • 2 tablespoons soy sauce
    • 15 rice noodles
    • 7 rice paper
    • 21 shrimp cooked and shelled
    • 7 lettuce leaves
    • 7 teaspoons mayonnaise
    • 50 bean sprouts
    • ¼ lime
    • 2 tablespoons mint
    • 1 teaspoon unsalted butter

    Instructions

    • Cook the pork cubes for 3 minutes in a hot frying pan over medium heat with the butter. Add the soy sauce and set aside.
    • Meanwhile, cook the rice noodles for 4 minutes (but no longer!).
    • Then make your rolls one at a time: soak the rice paper in cool water for around 20 seconds, then place it on a damp cloth (it's quite soft, that's normal!).
    • In the corner closest to you, place 3 shrimp, then a lettuce leaf, a thin layer of mayonnaise, some rice noodles, carrots, a few bean sprouts, the soy pork, a few drops of lime juice and a few mint leaves.
    • Roll the first round tightly, then fold over the sides to form a right angle. Roll the second round until the roll is closed. If necessary, re-moisten your rice paper to close the roll.
    • Repeat until all the ingredients are used up, and enjoy!

    Notes

    You can serve these rolls with rice or salad.
