    Vietnamese chicken spring rolls

    😋 A quick and easy healthy recipe

    This Vietnamese speciality is really simple to make (don't panic, the folding is easy and if you can't manage it, you can watch my Tik Tok video just below) and it only takes 15 minutes to prepare!

    I don't really like the term "healthy" because I find it's often misused in diet culture, but now you're getting to know me a bit and you know I don't subscribe to it at all! When I say healthy, I'm talking about ingredients that are good for our health (not ingredients that will make you slim).

    It's pretty quick and really simple to make

    It's adaptable: you can totally change the filling with the one of your choice

    It's completely suitable for gluten intolerants and allergics, and it's easily veganizable (just replace the chicken with the mock carne of your choice: tofu, seitan, etc…)

    ✅ A recipe suitable for gluten intolerant/allergic people

    Rice leaves are gluten-free. Neither do chicken fillets, avocados, red onions, carrots, spinach or sesame raie-des.

    This recipe is therefore perfect for people who are intolerant or even allergic to gluten.

    🥕 What ingredients do you need?

    Here are the ingredients you'll need to make these spring rolls. The quantities can be found in the recipe card at the end of this article.

    • Spring roll wrappers: please note, not to be confused with rice cakes, which will be of no use to you for this recipe. You can usually find rice sheets in exotic or Asian grocery stores, and sometimes in some organic stores. If not, feel free to order them online.
    • Chicken fillets: try to use organic, free-range chicken if possible. They'll taste better and be healthier for you, and it's good for farmers who treat their animals well.
    • Soy sauce: salted, of course. Incidentally, if you didn't know, sweet soy sauce doesn't exist in Asian countries - it's a Western invention.
    • Olive oil: or the vegetable oil of your choice (linseed, sesame, sunflower, etc.).
    • Sesame seeds
    • Avocado
    • Red onion
    • Carrot

    🥬 When do you eat carrots and spinach?

    Carrots can be eaten from September to March!

    As for spinach, you can eat it from September to May.

    😰 How do you roll spring rolls?

    If you thought folding spring rolls was complicated, don't panic, it's super simple!

    Once your sheet is nice and wet and you've laid it on a damp tea towel, place your filling at the bottom of the roll. First make a tight first turn, then fold the sides over to form a right angle. Now all you have to do is roll up the roll. If it has dried out, don't hesitate to apply a little water with your finger to close it properly.

    And that's it, your roll is ready, all you have to do is repeat the operation until you've used up all the ingredients.

    😇 Storage

    If you place your rolls in an airtight container (or wrap them tightly in plastic film/foil), you can store them in the fridge for 48 to 72 hours.

    Avocado spring rolls with soy and sesame chicken

    Spring rolls with avocado, chicken cooked in soy sauce, red onion, spinach and carrot: a real treat!
    Servings 4 spring rolls
    Prep Time 10 minutes mins
    Cook Time 5 minutes mins
    Total Time 15 minutes mins

    Ingredients

    • 4 large spring roll wrappers
    • 6 ounces chicken breast
    • 3 tablespoons soy sauce
    • 1 tablespoon olive oil
    • 1 handful sesame seeds
    • ½ avocado
    • ½ red onion
    • 1 medium-sized carrot
    • 4 handfuls spinach leaves

    Instructions

    • Cut the chicken breast into rough cubes. Then, peel the avocado, slice it, peel the carrot, and make thin strips using a peeler. Next, finely slice the red onion.
    • In a hot pan with the olive oil, add the chicken cubes and soy sauce. Let them cook over medium heat with a lid, stirring occasionally. Once cooked, set aside.
    • Now, let's move on to the folding: dip the rice paper sheet in cold water for about 20 seconds, then place it on a well-moistened cloth (it'll become soft, that's normal!).
    • Place a slice of avocado, some red onion, another slice of avocado, a few carrot strips, three pieces of chicken with a sprinkle of sesame seeds, and some spinach leaves.
    • Roll the first turn tightly, then fold the sides to form a right angle. Roll the second turn until the roll is closed. If needed, dampen your rice paper sheet to seal it properly. Repeat the process three more times and enjoy with rice or salad!
