This delicious tuna, cream cheese and tomato toast is super gourmet and express, as it's ready in less than 10 minutes! Tuna mixed with cream cheese, ginger, lime and a few herbs, then spread on toast. All served with a fresh tomato and a runny egg: a pure delight!

These are the main ingredients, and the quantities can be found in the recipe card below.
- Bread, the kind you like: seeded, wholemeal, gluten-free, etc...
- Tuna : I recommend a good quality tuna, as it is one of the main ingredients in this recipe. The one with extra virgin olive oil is great!
- Cream cheese
- Herbs: chives, dill, parsley and basil.
- Ginger: with its sweet, slightly lemony flavour, it delicately flavours the tuna.
- Lime: in duo with ginger, they work great!
- A tomato: make the most of it, it's in season from June to September inclusive. You can choose the color of your choice: red (classic), yellow (pineapple), green (Green Zebra) or even beef heart tomato.
- Eggs - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
- Balsamic vinegar

I recommend a salad (baby spinach, for example) with a classic or original vinaigrette. Zucchini or carrot tagliatelle (depending on the season) or Edamame could also be a good idea.

Tuna toast
Ingredients
- 1 slice bread
- ⅔ cup tuna canned in extra virgin olive oil
- ¼ cup cream cheese
- 1 tablespoon chives
- 2 tablespoons dill
- 1 tablespoon parsley
- 1 teaspoon ginger
- ¼ lime
- 1 small tomato
- 1 egg
- fresh basil
- ½ teaspoon olive oil
- Balsamic vinegar
- salt to taste
- black pepper to taste
Instructions
- Chop the dill, parsley and chives. In a bowl, mix the tuna, cream cheese, chopped herbs, ginger and lime juice.
- Toast your slice of bread and place the mixture on top.
- Add the chopped tomato and place your egg with the shell in a pan of boiling water: leave to cook for 6 minutes, then run under cold water to stop the cooking process, before peeling.
- Place the soft-boiled egg on the toast, season with salt and pepper, a little basil, a drizzle of olive oil and Balsamic vinegar, and enjoy!
