- Starchy foods : don't hesitate to add "real" pasta or rice to this recipe, for a complete dish.

- Chicken: you can replace the shrimp with pre-cooked chicken, which you add at the last minute.

- If you're not using frozen shrimp: check on the packaging or with your fishmonger that they have been frozen beforehand, to eliminate any potential bacteria.
- Tip for successfully cooking shrimp: if they form a C, they are "cooked". On the other hand, if they form an O they are "over cooked"...
- Fry your zucchini well, allowing the water to evaporate so they don't get soggy.

Yes, of course! Use a vegetable peeler to make your zucchini ribbons and then place them in an airtight container (or a freezer bag) in the fridge. This way, you can keep them for 2 to 3 days. Prepare the sauce and shrimp at the last moment.
I do not recommend it; you won't have any control over the cooking since they are already cooked. Therefore, you may end up with overcooked and rubbery shrimp.

Parmesan garlic shrimp zucchini noodles
Ingredients
- 4 ⅞ cups zucchini sliced
- ⅞ cups creme fraiche
- ½ cup Parmesan cheese
- 1 lbs shrimp raw and unpeeled
- 1 teaspoon garlic powder
- 20 parsley leaves
- 1 pinch Cayenne pepper
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
Instructions
- With a peeler, make zucchini ribbons and sauté them in a pan for 15 minutes over high heat with a drizzle of olive oil. Stir often to prevent sticking.
- Meanwhile, shell and devein the shrimp, removing the heads. Usually, a black thread will come out with it; these are the intestines. If you don't see it, use a pick to remove it; it is in the middle of the back.
- In a small pan, add cream, freshly grated Parmesan, parsley, Cayenne pepper, garlic, and shrimp. Cook for a few minutes until the shrimp turn pink (if they form a C, they are "cooked," and if they form an O, they are "over-cooked"). Mix with the zucchini noodles. Enjoy!
