🧀Ingredients
You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this perfect meal.
- Italian seasoning, that you can find in your local grocery store.
- Garlic cloves - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Dry white wine - Sauvignon blanc, Chardonnay, Pinot Grigio, Chablis, etc...
- Parmesan cheese - I really recommend buying it in block and grate it yourself at the last moment, it's soooo much better!
- Gnocchi - wether you use store-bought gnocchi or fresh gnocchi, the choice is up to you but I'd have a slight preference for the fresh ones!
🍗Variations
Feel free to change this recipe to go with your tastes. I suggest several options:
- Proteins - Italian sausage would be absolutely delicious to replace chicken in this recipe!
- More veggies - baby spinach (in season from December to June) or cherry tomatoes (in season from June to September included)
- Spice it up with some red pepper flakes or a pinch of Cayenne pepper.
This recipe has not been tested using any other substitutions. If you do try substituting ingredients, it may not turn out as it's meant to. Please leave a comment below letting me know if it worked out!
✨How to make this easy recipe?
Recipe details and quantities are in the recipe card below.
- Put 1 tablespoon Italian seasoning and 1 tablespoon olive oil on the chicken breasts, massaging well with your hands.
- Heat a large skillet on medium-high heat and when it's hot, add chicken breasts on the oily side and cook on both sides.
- Then set aside in closed aluminum foil until the recipe is done.
- Add the rest of olive oil in the pan and sauté garlic and onion for a couple of minutes, until golden brown.
- Deglaze with white wine, then add lemon juice.
- Add sun-dried tomatoes, the rest of Italian seasoning, Espelette pepper, heavy cream, salt, black pepper, oregano, thyme and mix well.
- Add the Parmesan cheese, mix again and let it simmer on medium heat for 2-3 minutes.
- Add ⅛ cup water, the uncooked gnocchi and cook for a few minutes until the sauce thickens.
- Serve the gnocchi and sauce on plates, cut up the cooked chicken breasts and add them on top. Sprinkle with fresh basil and fresh thyme, and enjoy!
👩🏻🍳Chef's tips
- If you want to be 100% sure your chicken breasts are food-safe, you can insert a meat thermometer into them: if the internal temperature is below 330°F/165°C (according to the US Department of Agriculture), leave them to cook for a few more minutes.
- For even more deliciousness, serve this dish with a garlic bread.

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat - place leftovers in a microwave safe dish and heat until pipping hot.
- Freezing - place each portion in a freezer bag and pop into the freezer, with the date and recipe name.
- Defrosting - place what you want to eat in a preheated oven (320°F/160°C) for 10 to 15 minutes, until perfectly hot.

Quick & easy one pan creamy chicken and gnocchi
Ingredients
- 2 tablespoons Italian seasoning divided
- 2 tablespoons olive oil divided
- 2 chicken breasts
- 3 small garlic cloves pressed
- 1 small onion chopped
- ⅓ cup dry white wine
- ½ lemon
- ⅓ cup sun-dried tomatoes
- ¼ teaspoon Espelette pepper
- 1 ⅔ cups heavy cream
- salt to taste
- black pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- ½ cup Parmesan cheese freshly grated
- 14 ounces gnocchi
- 6 basil leaves chopped
Instructions
- Put 1 tablespoon Italian seasoning and 1 tablespoon olive oil on the chicken breasts, massaging well with your hands.
