Here are the ingredients you'll need to prepare this recipe. Quantities can be found in the recipe card at the end of this article.
- Leeks
- A red onion
- Butter for cooking
- Pasta: you can use any kind you like. In the photos, I'm using Rotelle by La Molisana*.
- Pistachios: I advise you to buy some already shelled, otherwise it will be very tedious to shell them one by one.
- Mozzarella cheese
- Creme fraiche
- Salt and pepper
✅ Gluten-free version
If you are gluten intolerant or allergic, buy gluten-free pasta.
Butter, mozzarella, crème fraîche, red onion, leek and pistachios are gluten-free.
😇 Storage
This pasta can be stored in an airtight tin in the fridge for 48 hours.
I've frozen them before, when I didn't feel like eating everything quickly. To defrost, reheat them in the microwave or oven, but don't forget to add a little water to prevent them from drying out.

Creamy leek pasta
Ingredients
- 3 cups leek diced
- 1 red onion
- 2 tablespoons unsalted butter
- 2 ½ cups pasta
- 1 tablespoon unsalted pistachios shelled
- 1 cup mozzarella cheese
- 5 tablespoons creme fraiche
- Salt to taste
- Black pepper to taste
Instructions
- In a hot frying pan with a large knob of butter, place the well-washed and sliced leeks. Cover and cook over medium heat for 15 minutes, stirring frequently to prevent sticking.
- Remove the lid and add the finely chopped red onion. Switch to high heat and stir often. Meanwhile, cook the pasta for the required time.
- Add the chopped mozzarella and creme fraiche to the pan, then replace the lid and melt over low heat, stirring occasionally.
- Once the sauce is ready, season with salt and pepper and add the drained pasta.
- Arrange on plates and garnish with chopped chives and crushed pistachios.
